Cherry Almond Crisp (GF/Vegan)

Ingredients
  

Filling

  • 4 cups black cherries, pitted about 1.5lbs
  • 1/2 cup granulated sugar
  • 3 Tablespoons cornstarch
  • 1/2 teaspoon almond extract
  • pinch salt

Topping

  • 1/2 cup almond flour
  • 3/4 cup old fashioned oats
  • 1/4 cup sliced almonds
  • 1/2 cup light brown sugar
  • 1/2 cup refined coconut oil room temperature
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions
 

  • Preheat oven to 350° and lightly grease a 1.5 quart dish or 8x8" pan.
  • In a large bowl, combine all ingredients for filling and stir until well combined. Pour into pan.
  • In a medium-sized bowl, combine almond flour, oats, sliced almonds, sugar, cinnamon, nutmeg and salt. Cut in coconut oil and work the mixture with your fingers until it forms pea-sized crumbs. Sprinkle over top of cherry mixture.
  • Bake for 40 minutes. Let cool slightly.
